•
Test batter by dropping a small amount in water; if it floats, it's ready for frying, ensuring soft vadas.
•
Fry small balls of batter in medium-hot oil until golden brown and cooked through.
•
Immediately soak fried vadas in lukewarm water with salt and asafoetida for 10 minutes to make them extremely soft.
•
Prepare thin yogurt with salt, chili, cumin. Gently press soaked vadas, place in yogurt, and serve with chutneys or chaat masala.
